(all depends on how much you want to make, but let’s say you want enough to last you about a week/5days)
2 to 3 medium or large tomatoes, chopped
1 jalapeno (or 2 if you are really into jalapenos. I’m not), seeded & thinly diced
1 medium green bell pepper, seeded, ribbed & diced
1 medium onion, diced
1 garlic clove, minced
juice of 1 lime
fresh Cilantro to taste (I like heaps)
pinch of salt or to taste
Mix everything together in a container, no blender or food processor required and enjoy! I use a container that will stay sealed/keep things fresh. I like to eat mine with a dollop of sour cream and multi-grain tortilla chips.
Keeps well in the fridge for about a week/week and a half, unless you eat it all before then!
