- Spinach Tortilla
- 1 can Black Beans
- some Red Onion, diced fresh
- some Tomatoes, diced fresh
- Fresh Greens - baby spinach, arugala or spring mix
- Soy Cheese - (Mozzarella)
- Olive Oil
- Pinch of Salt
- Minced Garlic
- Cumin
- Paprika
- Cayenne Pepper
Warm can of beans at medium heat. Add pinch of salt, cumin, paprika, cayenne pepper & garlic to taste. On medium-low heat, add a little olive oil and throw in onion, tomatoes, greens, salt & garlic to taste. When onions are soft, turn off heat and set aside. In another pan, lay tortilla flat on medium heat. Scoop one large spoonful of beans into a bowl and mash with a fork. Add cheese, beans, and veggies to tortilla til crisp.
