Nana Piepmeier’s Cranberry Salad From the kitchen of kelpiep

  • 1 lb cranberries
  • 1 c chopped celery
  • 1 c chopped pecans
  • 1 orange - peel & all
  • 1 red apple - peel & all
  • 1 lemon - peel and all
  • 1 can crushed pineapple, juice and all
  • 2 pkg raspberry Jello, 3 oz size (or 1 pkg 6 oz size), boiling water as per box
  • 2 Knox gelatin envelopes, softened in cold water, as per directions on envelope

After softening the Knox gelatin in cold water, add to the hot water and Jello.

Grind: cranberries, orange, apple and lemon in food processor or grinder. Cover with sugar and let stand 20 minutes. Chop nuts and celeary and add with pineapple to other ground ingredients in 9” x 13” pan. Add prepared Jello and gelatin. Let set at least 12 hours in refrigerator.
