Black Bean and Feta Cheese Salsa From the kitchen of kelpiep

  • 1/4 c. apple cider vinegar
  • 1/4 c. vegetable oil
  • 1/4 c. sugar, or to taste
  • 2 tsp garlic salt (I use garlic powder)
  • 1 can (15 oz) black beans, drained and rinsed (I use organic)
  • 1 can (11 oz) white shoepeg corn, drained
  • 8 oz feta cheese, crumbled
  • 1 bunch scallions, chopped

Whisk the vinegar, oil, sugar and garlic salt (or powder) in a bowl until blended. Add the beans, corn, cheese and scallions and mix well. Serve with tortilla chips or crackers of your choice. Refrigerate any leftovers.
