- 1/4 c. apple cider vinegar
- 1/4 c. vegetable oil
- 1/4 c. sugar, or to taste
- 2 tsp garlic salt (I use garlic powder)
- 1 can (15 oz) black beans, drained and rinsed (I use organic)
- 1 can (11 oz) white shoepeg corn, drained
- 8 oz feta cheese, crumbled
- 1 bunch scallions, chopped
Whisk the vinegar, oil, sugar and garlic salt (or powder) in a bowl until blended. Add the beans, corn, cheese and scallions and mix well. Serve with tortilla chips or crackers of your choice. Refrigerate any leftovers.
