- 1 large zucchini
- 1 large summer squash
- 1/4 to 1/3 c olive oil
- 1 T minced garlic
- salt and pepper to taste
Preheat oven to 350ยบ F.
Mix the olive oil and garlic in a small bowl, set aside. Slice zucchini and summer squash lengthwise into 1/16” slices. Place the squash and zucchini on a cookie sheet. Brush or spoon the olive oil and garlic mixture onto the slices of zucchini and squash slices and place on the top rack of the heated oven. Roast the vegetables for 6 minutes or until lightly browned.
Refrigerate any leftovers.
