Suzy Dodd’s Pumpkin Cake From the kitchen of kelpiep

  • 4 eggs
  • 3/4 to 7/8 c brown sugar
  • 3/4 to 7/8 c, honey
  • 2 c, (16 oz) pumpkin
  • 1 1/2 c, oil
  • 2 c. whole wheat pastry flour
  • 1/2 c. wheat germ
  • 1/2 c. ehrsy bran
  • 2 1/2 t. cinnamon
  • 1 1/2 t. baking soda
  • 1 t. salt

In large bowl, beat eggs with sugar until fluffy, Add honey, pumpkin & oil - mix well. In another bowl mix flour, wheat germ, bran, cinnamon, soda & salt. Add to pumpkin mixture & mix well. Pour into greased 9” x 13” x 2” pan. Bake at 350 degrees for 40 minuntes.
