Squash-Oatmeal Cookies From the kitchen of kelpiep

INGREDIENTS

  • 3/4 cup butter
  • 3/4 cup honey
  • 1 cup grated raw winter squash
  • 1 egg
  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking power
  • 1 1/2 cups rolled oats
  • 1 cup raisins

DIRECTIONS

Allow butter to come to room temperature and mix well with honey. Beat in squash and egg. Add four and baking power, and mix well. Then add oats and raisins, and stir well again. Drop by teaspoonfuls onto greased cookie sheet and bake at 400 degrees Fahrenheit for about 12 minutes.

Yields about 50 cookies.
