Honey Oatmeal Cake From the kitchen of kelpiep

  • 1 c rolled oats
  • 1 stick butter
  • 1 1/4 c boiling water
  • 1 1/2 c honey
  • 1 t cinnamon
  • 1 t vanilla
  • 2 eggs
  • 1 3/4 c whole wheat flour
  • 1 t baking soda
  • 3/4 t salt
  • 1/4 t nutmeg

Put oats, butter & boiling water in large bowl and let set for 20 minutes. Add honey, vanilla and eggs. Add rest of ingredients, mix, and pour into greased and floured 9” x 13” pan. Bake 30 - 40 minutes at 350ยบ. Excellent plain or iced with a caramel-coconut frosting (although I make it without the coconut.)

Topping for Honey Oatmeal Cake

  • 6 T butter
  • 3/4 c honey (or brown sugar)
  • 2 t cream
  • 1/2 c pecans chopped
  • 1/2 c coconut (optional)

Mix above ingredients together. spread on warm cake just out of oven and broil until topping bubbles and browns. Be careful - this burns quickly!
