Banana Bread From the kitchen of kevin

  • 1/2 cup sugar
  • 1/2 c. butter, softened
  • 2 eggs
  • 3 medium mashed bananas (about 1 cup)
  • 3/4 c honey (orange blossom is best, of course!)
  • 1 1/2 c all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1 cup quick oats

In mixing bowl, cream together sugar and butter. Beat in eggs, bananas, and honey. Stir dry ingred. together and add to creamed mixture. Beat JUST until blended. Overbeating will leave big holes in the finished product. Stir in oats until blended. Pour into greased pan or muffin cups lined with paper liners. (NOTE: this may be the time to investigate parchment baking paper (available at the grocery in the baggie section) and cut it to fit the bottom of your loaf pan or whatever you use. Just a thought.) Bake @ 375 deg. for 18 to 20 mins (loaf may take longer). Makes 24 muffins.
