Corn Pudding From the kitchen of kevin

  • 1 package Jiffy or other cornbread mix (8.5 oz.)
  • 3 eggs
  • 1/4 cup melted butter
  • 1 small onion, chopped
  • 1 green pepper, chopped (Optional; we don’t put this in ours)
  • 1 17 oz. can cream style corn
  • 1 17 oz. can cut corn, undrained

Bake in a shallow 2 qt. casserole (well greased or sprayed) @ 350 deg. for approx. 1 hour or until set. Don’t over cook.
