Pumpkin Muffins
Ingredients
- 1 Can Pumpkin Pie Filling (pure pumpkin)
- 1 Box Spice Cake Mix
Instructions
- Mix pie filling and cake mix in a large bowl
- Spread into muffin pan or mini muffin pan (use cooking spray in not a nonstick pan)
- Bake at 350° for 15 minutes (or until an inserted toothpick comes out cleanly)
Makes three dozen mini muffins or one dozen large muffins.
Icing
Ingredients
- 4 oz. cream cheese
- 1/2 cup confectionary sugar
- 1/4 cup unsalted butter
- 1/4 tsp. vanilla extract

- Mix ingredients in medium bowl
- Spread on cooled muffins
