This recipe feeds a crowd. Excellent for family gatherings and potlucks. Or to stock your freezer.
Ingredients:
- 4 cloves garlic, minced
- 1 medium onion, chopped
- 2 packages frozen chopped spinach, thawed. Use cheesecloth to really squeeze out the extra water.
- 1 lb. good quality Italian sausage
- 5 large eggs
- 1 1/2 c. grated parmesan cheese
- 2 packages of cream cheese
- 2 boxes of large pasta shells
- 1-2 packages of shredded mozzarella cheese
- Tomato sauce of your choice (a couple jars or so)
Directions: Cook pasta shells in boiling water for 5 min. Drain and set aside to cool.
Brown sausage in a large pan. Spoon out the sausage and use the drippings to saute the onion, garlic and spinach. Add a little olive oil if you need. Let cool a little.
Preheat oven to 350ยบ
In a large bowl, combine the onion, garlic, spinach, sausage, eggs, cream cheese and parmesan. (My grandmother usually adds 1/4c. of vegetable oil, but I’m not sure if I do. I forget). If the consistency is too dry, add some oil, if too wet, add some breadcrumbs or extra parmesan.
Spread tomato sauce on the bottom of 2 large glass baking dishes. Stuff the shells and line them on top of the sauce. Do not stack them. Spoon tomato sauce over the shells and a layer of cheese.
Cover with foil and bake for 45 minutes.
