Preheat oven to 400º

Ingredients:

• 2 boxes frozen chopped spinach, thawed (use cheesecloth to really squeeze out the liquid)
• 1 large onion, chopped
• 2 packages of cream cheese
• 4 eggs
• good handful of parmesan cheese
• 1/4 c. oil
• 1 package of phillo dough

Directions:

Mix first 6 ingredients until evenly combined.

Layer seven layers of phillo on the bottom of a glass baking dish. Brush with melted butter in between each layer. Then add the stuffing. Then seven more layers of phillo brushed with melted butter between each layer.

Bake for 30 min.
