Ingredients:
- Onion
- Butter
- Beef Broth (or whatever broth you have on hand)
- Garlic
- Crushed Tomatoes
- Tomato Sauce
- Plain Yogurt (full fat or fat free, whichever)
Directions:
Heat a little butter in a pan. Add in some chopped onion and cook until translucent. Add in some broth and cook down until the liquid is reduced. Add a little more broth and the garlic. Cook down a little and then add in the remaining broth, crushed tomatoes, tomato sauce and any seasonings. I also added a chopped canned jalapeƱo. Bring to a simmer and let cook for a little bit.
Transfer the contents to a food processor and puree. Strain back into the pan and whisk in the yogurt. Add some salt and pepper and a grilled cheese sandwich. Done.
