Ingredients:
- 1 can black beans, drained and rinsed
- 1 can of corn, drained
- 1 bell pepper, color of your choice, finely chopped
- 1-2 tomatoes, diced
- juice of 1 lime
- 1-2 cloves of garlic, minced
- cilantro, chopped
- 1 tsp cumin, or to taste
- 1 tsp chili powder, or to taste
- paprika
- salt/pepper
- 2-3 tsp red wine vinegar
- 1 tsp oil
- *onion, chopped (I personally don’t add this, but if you really like onion, go for it! Although, I think green onions could be good in this.)
- **I haven’t tried yet, but I think avocado would be good too
Directions:
Combine all ingredients in a bowl, stir to combine. Cover and chill. Serve with chips or as a side. Leftovers can be refrigerated for a few days and tastes better as it sits.
