Black Bean and Corn Salad From the kitchen of taylorrific

Ingredients:

  • 1 can black beans, drained and rinsed
  • 1 can of corn, drained
  • 1 bell pepper, color of your choice, finely chopped
  • 1-2 tomatoes, diced
  • juice of 1 lime
  • 1-2 cloves of garlic, minced
  • cilantro, chopped
  • 1 tsp cumin, or to taste
  • 1 tsp chili powder, or to taste
  • paprika
  • salt/pepper
  • 2-3 tsp red wine vinegar
  • 1 tsp oil
  • *onion, chopped (I personally don’t add this, but if you really like onion, go for it! Although, I think green onions could be good in this.)
  • **I haven’t tried yet, but I think avocado would be good too

Directions:

Combine all ingredients in a bowl, stir to combine. Cover and chill. Serve with chips or as a side. Leftovers can be refrigerated for a few days and tastes better as it sits.
