Ingredients:
- 1 can black beans (don’t drain)
- 1 vidalia onion, chopped
- 1 T. olive oil
- 1 or 2 cloves garlic, minced
- 1/2 tsp. paprika
- 1/4 tsp. cumin
- 1/4 tsp. chili powder
- a pinch of cinnamon (JUST a pinch)
- salt and pepper
Directions:
Warm up the olive oil in a large frying pan or saucepan. Add in the onion and cook until translucent and tender. Add in the garlic and cook a few seconds, just until fragrant. Pour in the can of black beans and seasonings. I threw my seasonings in kind of randomly and didn’t measure, so adjust to your own tastes, except when it comes to the cinnamon. Just a tiny sprinkle adds a warm friendly taste that’s worth it, but don’t add more than that or you’ll just have cinnamon beans. And that would be gross.
Lower the heat and let simmer for about ten minutes, or however long it takes to hang out and chat while your friend smokes a cigarette. Stir it a bit and mash up some of the beans. If it’s too runny, let some of the liquid cook off.
Makes 3-4 side servings or one rather large bowl of deliciousness.
