Chili From the kitchen of taylorrific

Ingredients:

  • 1lb. ground beef
  • 1 T butter
  • 1 onion, chopped
  • 1-2 bell peppers, chopped
  • 2 or 3 garlic cloves, minced
  • 2 cans diced fire roasted tomatoes with green chiles
  • 1 small can tomato sauce
  • 1 can tomato paste
  • 2 T chili powder
  • 1 T paprika
  • dash smoked paprika
  • 1 tsp cayenne powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 tsp brown sugar
  • 1 tsp cocoa powder
  • some molasses (optional)
  • 1-2 chipotle peppers in adobo sauce, chopped (optional)
  • 1 can black beans, drained and rinsed
  • 1 can red kidney beans, drained and rinsed
  • 1 bottle or can of beer

Directions:

Brown beef in a large dutch oven or pot. Scoop out beef, but don’t drain. Add in the butter and melt, adding in onions and peppers. Cook until tender, about 10 minutes. Add in the garlic and stir for about a minute, just until fragrant.

Dump in all tomato ingredients. Mix the dry ingredients to make sure there are no clumps. Add in seasonings and stir to combine. Add in beans, beef, beer and molasses and stir. Bring to a slow boil. Reduce heat and simmer for about a half hour. Serve topped with sour cream or shredded cheese (or both!)
