Found this from an old Lunch Bunch recipe:
So I mostly kind of made it up, but here’s a rundown. Makes 16-18 burgers and you could probably freeze the extra.
- 2 red bell peppers, chopped fine
- 2 green bell peppers, chopped fine
- 1 medium red onion, chopped fine
- about a whole onion’s worth of chopped frozen white onions
- a couple spoonfulls of minced garlic
- some olive oil for cooking
- 2 cans black beans
- 1 can chickpeas
- 1 can pinto beans
- 1 small can diced green chiles
- 3 eggs
- quick cooking oatmeal
- regular breadcrumbs
for seasoning:
- about half and half of chili powder and cumin, maybe 2-3TBSP each
- I had leftover homemade taco seasoning that i threw in, which had paprika, cumin, chili powder, garlic powder, coriander, oregano, salt, pepper and a pinch of sugar
- about a TBSP each of oregano and parsley
- a couple tsps of salt
Directions: First I sauteed the frozen onion in oil until just soft then added in the red onion and cooked until just translucent. Then I added in the red and green pepper and a little more oil. I cooked that for awhile, added in the garlic, cooked for a minute or so then lowered the heat, put a cover on the pan and let steam awhile so that they got nice and soft, maybe 7-8 minutes. Then I transferred to a bowl and let cool for a little bit.
In a large soup pot I added the beans (all rinsed first), the chiles and the onion/pepper mixture and kind of mixed/squished it together to break up/mash some of the beans. I then added the seasoning and mixed that up. I then added the 3 eggs, making sure the mix was cool enough to handle so that it wouldn’t cook the egg. Then added the dry ingredients. I really didn’t measure the dry ingredients, just dumped them in alternating until it was about the consistency of raw meatloaf.
I let the mix sit in the fridge for a few hours then made the patties as you would a regular hamburger.
To cook, I had the oven set to 375ยบ and cooked them for about 20 minutes on one side then turned them and another 8 minutes on the other. Depending how wet they are, they may need to bake for more or less time.
