From ‘98 Malawi trip. Zioni made this for our team on our last night in Malawi.
- Green cabbage, shredded
- Tomatoes, chopped
- Green onions
- Oil for sautéeing (preferably peanut oil)
Zioni served this with nsima, a local staple made from cornmeal. Grits, polenta, or rice would do just fine.
Heat oil in a pan and sautée all ingredients until the cabbage is just tender. Serve hot over nsima/grits/polenta/rice. While neither fancy nor spectacular, it is hearty, filling and inexpensive.
