- 6 chicken breast halves
- 1 quart water
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 can cream of chicken soup
- 1 (8-oz.) carton sour cream
- 1/2 teaspoon pepper
- 1/4 (1 lb) box Ritz crackers, crushed, (1 stack)
- 1/4 cup butter, melted
Combine first 4 ingredients in a large pot, bring to a boil. Cover, reduce heat, and simmer 1 hour or until tender. Remove chicken, and cool slightly. Skin and bone chicken; shred chicken into bite-size pieces. Combine chicken, soup, and the next 3 ingredients, stirring well. Put chicken mixture into a lightly greased baking dish. Top with crushed crackers and drizzle with melted butter. Bake at 325 degrees for 30-35 minutes or until lightly browned and bubbly.
